‘Lugaw’ in Philippines

‘Lugaw’ is a rice soup cooked in meat broth which is popular in Philippines or what we called porridge. You can see lugaw mostly in the street vendors and the price is so cheap. Filipino children love ‘lugaw’ especially when they are not feeling well. It’s the best food for those who are ill.

‘Ang lugaw ay para sa mga bata.’, which means ‘Lugaw is for children’.

An Arroz Cando is one of a kind of lugaw in the Philippines.
Marap ang lugaw. – Porridge is delicious.


How to cook lugaw:

  • Heat the oil over medium high heat then add the rice with water and cover it for 5 to 10 minutes until it’s lightly browned. (Stir occasionally).
  • Add the sliced chicken/beef broth into the pot and stir it. Reduce the heat and simmer it into 40 to 45 minutes.
  • Afer 40-45mins, combine and add the ginger, crushed garlic, coconut vinegar, brown sugar, soy sauce and fish sauce and dried red pepper then continue to cook it in 20 minutes.
  • And serve the lugaw in a bowl while it still hot. Enjoy your LUGAW!
